Welcome
(If
you can find another pig for this page, please let me know). This lad really sums
up our farm, I hope - friendly and welcoming. We do ask that people contact us
to arrange a time to visit as we don't have an open farm. Alternatively we
attend Clonakilty market each Thursday and would be happy to talk with you
there. I also produce an occasional newsletter, although this will have to begin
rather slowly for the moment as I have lost all my contact details, so am
starting from scratch (if you would like to get it, please contact
me).
I can't believe that it is is five months since I last
updated the website. Time flies when you're having fun! In our case it's just
been busy and there are only so many hours in the day.
I'm still enjoying my main weekly social outlet, Clonakilty Market. Some
of our products are also available in Dublin: Nolan's
Supermarket, Clontarf, and Liston's in Camden Street, also check out Thyme Out
in Dalkey, Passion in Dun Laoghaire and Walsh
Fine Food & Wine in Naas; S.V. Mount Merrion and S.V. Churchtown,
Donnybrook Fair and Morton's of Ranelagh.
Locally, Martin Carey stocks our free range pork in
his outlet in Bandon.

pass on a few of my own ideas or those I've garnered from other enthusiastic
cooks.
There is no mail order service available at present.
Willie is
just working too hard keeping up with demand. However if anyone is in
West Cork on holiday and wants to return home with some of our products, we
strongly advise a cool box and icepacks. It makes sense, doesn't it!
I have also received queries regarding dry cure
and, to put it simply, there is no added water, and we use no phosphates in the curing process.
No brine. It's old-fashioned and takes time, but it works.
From time to time, we make special batches of
sausages for individuals, either particular flavours or, if they have their own
meat, we process the meat for them.
Our free range Irish Angus beef is hanging as I write, so will have
some in the next week or so (today's date 21st February, 2005).
Finally, to add to our range, there are free range lamb sausages and burgers
available from time to time at the market. If you are interested in these
products in particular, please contact us and we can make them almost to order.
